Holiday Catering Pickup: Know Before You Pull Up

Thanks for ordering your holiday feast from Ruby’s! Before you pull up and see the fam, here’s everything you need to know to make your pickup smooth, warm, and full of good vibes.

Reheating Insructions

Follow these steps to reheat your dishes perfectly and get them table-ready in no time. Let’s make this holiday meal unforgettable! 🧡

Sauces

  • CRANBERRY SAUCE: Remove from the refrigerator 45 minutes before serving. Serve at room temperature.

  • HERB GRAVY: Pour into a saucepan and heat over low heat, stirring frequently. Bring to a simmer, then continue cooking until it reaches your desired thickness.

  • CREOLE SAUCE:
    Pour into a saucepan and heat over low heat, stirring frequently until the sauce begins to simmer. Once hot, remove from heat.

  • REMOULADE SAUCE: Keep refrigerated until ready to serve.

Cold Side Dishes

  • POTATO SALAD: Keep refrigerated until ready to serve.

  • CORKSCREW PASTA W/ SHRIMP: Keep refrigerated until ready to serve.

Hot Side Dishes

  • CORNBREAD: Can be served at room temperature. Preheat the oven to 300°. Keep the pan covered. Heat for approximately 20 minutes.

  • HOLY TRINITY GREENS: Preheat the oven to 350°. Keep the pan covered. Heat for 25 - 30 minutes.

  • GREEN BEANS: Preheat the oven to 350°. Heat covered with plastic wrap and aluminum foil for 10 minutes and cook for another 5 minutes uncovered.

  • MACARONI & CHEESE (UNCOOKED): Preheat the oven to 350°. Cook with the pan covered for 20 minutes and cook for another 15-20 minutes uncovered until golden brown.  NOTE: ALLOW PAN TO SETTLE / REST 15 /20 MINUTES BEFORE SERVING

  • CANDIED SWEET POTATOES: Preheat the oven to 325°. Keep the pan covered. Heat for approximately 30-35 minutes.

  • MASHED POTATOES: Preheat the oven to 325°. Keep the pan covered. Heat for approximately 30-35 minutes.

  • BLACK EYED PEAS: Preheat the oven to 325°. Keep the pan covered. Heat for approximately 35-40 minutes.

  • CAST IRON CORNBREAD DRESSING / STUFFING:
    Preheat the oven to 325°. Keep the pan covered. Heat for approximately 30- minutes or to the desired temperature. Remove foil for the last 10 minutes.

Appetizers

  • PETITE CRAB CAKES: Preheat the oven to 325°F. Heat the crab cakes uncovered in the oven for 10-15 minutes, or until the internal temperature reaches 165°F. Serve with Cajun remoulade.

  • DEVILED EGGS: Refrigerate until ready to serve.

Mains

  • TURKEY: Preheat the oven to 350°. Heat for 25 - 30 minutes

  • BEEF BRISKET: Pre-Heat Oven to 300°. Add 1 cup or Water or Beef stock to the pan. Wrap in Foil,Heat for 15-25 Minutes

  • PORK SPARE RIBS: Remove Ribs from Plastic wrapping. Preheat the oven to 300°. Place Foil wrapped slab into the oven for 25 minutes. Cut and serve.

  • PAN SEARED SALMON: CURRENTLY SERVED RARE TO AVOID OVERCOOKING: Preheat the oven to 350°. Remove cover. Heat for 8-10 min

Dessert

  • PEACH COBBLER: Preheat the oven to 300°. Keep the pan covered. Heat for approximately 30-35 minutes.

  • LEMON POUND CAKE: Let sit at room temperature for 1 hour before serving

  • SWEET POTATO PIE: Best served cold. If room temperature preferred, let sit for 30 minutes before serving.
